Red Wine Bolognese

Ingredients
  

Sofrito

  • 0.5 Onion
  • 0.5 stick Celery
  • 1 Carrot

Post Post Sofrito

  • 250g Beef Mince 20% Fat
  • 94ml Red Wine
  • 3 splashes Worcestershire Sauce

Herbs

  • 0.5 tsp Oregano
  • 0.5 tsp Basil
  • 0.5 tsp Thyme
  • 0.25 tsp Parsley

Additional

  • Salt
  • Pepper
  • Olive Oil

Instructions
 

Sofrito

  • Start by peeling your carrots and dicing your onion, celery and peeled carrots into 0.5cm cubes
  • Add your diced sofrito ingredients into a preheated pan on a medium-high heat with olive oil and cook until softened, around five minutes
  • While you soften your vegetables, peel and finely dice your garlic
  • When your vegetables have softened, move them to one side and add the diced garlic and tomato paste and cook until fragrant, around 30 seconds, then mix to combine

Bolognese

  • Now add your mince to the pan, season with salt and pepper and brown off I like to mix the mince together to give it the texture of sausage meat which when browned creates chunks of mince that create a texture variety
  • Once your mince has browned mix to combine and add the herbs to the pan and mix to combine and cook for two minutes to bloom the herbs
  • Now add the red wine to deglaze the pan and allow the alcohol to cook off, around two minutes
  • With the alcohol cooked off, add the passata and mix to combine
  • Now add the Worcestershire sauce and mix to combine
  • Cover the pot and cook on medium low on a simmer for 2 – 4 hours, stirring every 15-30 minutes until the sauce has thickened
  • Finally add salt and pepper to taste
